Know Your Cut
Ribeye
The most forgiving and most flavorful cut. High in intramuscular fat (marbling), it stays juicy through higher cooking temperatures and rewards a medium to medium-rare preparation. If you are new to steakhouse dining, this is the reliable choice.
New York Strip
Leaner than the ribeye, firmer in texture, with a more pronounced beef flavor. Best at medium-rare to medium. The choice for diners who prefer a cleaner bite over rich fat.
Filet Mignon
The most tender cut — from the tenderloin, which does almost no work. Lower fat content means less inherent flavor, which is why preparations often incorporate butter or bearnaise. The choice when texture is the priority.
Bone-In Cuts
The bone acts as an insulator, creating a different heat gradient through the meat and, many argue, deeper flavor near the bone. They are also a statement on the plate.
Temperature — Know What You Are Ordering
- Rare (125F) — Cool red center. For the committed.
- Medium-Rare (130-135F) — Warm red center. Maximum juiciness and flavor. The chef’s recommendation for most cuts.
- Medium (140-145F) — Pink center. Firmer, less juicy.
- Medium-Well and above — We will cook it for you, but the steak will tell us you did it.
The Full Experience
